To Find The Best Spicy Margarita, You’ll Need To Go Back To School


A margarita seems like a straightforward drink but if it’s not made properly, the result can be too syrupy-sweet. On a recent road trip to West Virginia, I found a perfect Spicy Guava Margarita at The Rooftop at The Schoolhouse Hotel, a boutique hotel in a former schoolhouse.

This fantastic drink is made with ghost pepper tequila, triple sec, house margarita mix and guava puree. The cocktail was a beautiful color and had enough of a kick to make it just the right amount of spicy.

The atmosphere of the The Rooftop, the only hangout of its kind in White Sulphur Springs, added to the enjoyment with views of the city and the surrounding mountains. Sitting back and listening to some live music here, you’d do well with the margarita or any of the other cocktail options which when I visited included Sweet Tea Sangria (made with sweet tea, white moscato, raspberries and fresh mint), Hawaiian Mimosa (made with champagne, pineapple puree, fresh pineapple and cherry), Corona Sunrise (featuring Jose Cuervo, Corona, orange juice, grenadine and lime) and two drinks — a Cantaloupe Boozy Smoothie and a Blackberry Bourbon Boozy Smoothie, which can be made with or without alcohol.

Besides the fact that this 30-room hotel which opened in May 2022 is housed in a former high school, it is also a completely inclusive atmosphere, featuring accessible entrances, ADA compliant rooms and even a sensory room.

Conceived and developed by The Disability Opportunity Fund, The Schoolhouse Hotel’s design by architectural firm Crabtree, Rohrbaugh & Associates pays homage to the past with memorabilia from the old high school adorning the walls and playful nods to school days throughout the hotel.

It’s clear the The Rooftop has become a hub for both the community and travelers, and the craft cocktails plus beer, wine and small plates selections make it a must-stop for anyone heading through the Mountain State.

The Schoolhouse Hotel is located at 125 Schoolhouse Way, White Sulpher Springs, WV 304-536-0999. The Rooftop is open Friday – Sunday 4-10 pm while the hotel’s restaurant, The Varsity Club is open for lunch, dinner, weekend brunch and bar service. To-go breakfast sandwiches are offered Mon – Fri 7:15 – 9 am.
